Pizza, like most Americans I assume, is 100% in my top 5 favorite foods! This pizza on the grill recipe is always on the menu for the week and somehow it never gets old! The heat of a hot grill is perfect, and makes it possible to make incredible pizza at home.  Now, I need to start out by saying I can’t take much credit for this recipe. My mother in law introduced it to us and Tyler makes it for me (I don’t even know how to use the grill) but it’s definitely a family favorite and I knew I had to share! Don’t worry, I had Tyler help me write this recipe to make sure I got it right for you all. I CAN however take credit for my version of the pizza, I did all the hard work of telling Tyler what I wanted on it! HA

  In this post I included 3 recipes; the dough, my favorite, which is a pesto, fresh mozzarella & marinara pizza, and because I realize not everyone is a vegetarian and may like a meat option, Tyler’s favorite; BBQ chicken pizza.

Pizza on the grill (dough)

Equipment

  • pizza grill pan

Ingredients
  

  • 1 1/4 + 2 tbs C lukewarm water
  • 1 packet granulated yeast
  • 2 1/2 tsp kosher salt
  • 2 Tbs olive oil
  • 3 1/4 C flour
  • cornmeal

Instructions
 

  • In the bowl of your stand mixer fitted with the dough hook attachment, or in a large bowl working with a wooden spoon, mix the yeast, salt, sugar, and olive oil with the water
  • Mix the flour without kneading. If you are not using a machine you may need to wet your hands in order to incorporate the flour
  • Transfer dough to large bowl or lidded food container. Cover (not airtight), and allow to rest at room tempature until dough rises, approximately 2 hours.
  • The dough can be used immediately after the initial rise, though it is easier to handle when cold. Refridgerate in a lidded (not airtight) container and use over the next 12 days.
  • Take 1/4 of the dough and roll on floured surface into a round 12" circle
  • Brush olive oil on the grill pan, then top the oil with a nice dusting of cornmeal
  • Place dough on grill pan, and preheat grill. Turn THREE burners in a row on high heat and let grill reach 500 degrees
  • Add desired toppings
  • Once grill reaches 500 degrees turn off middle burner and reduce other two burners to medium heat and place pizza pan in the middle.
  • Cook for 10-15 minutes rotating once. You'll know it's done when the bottom starts to brown

Notes

This dough can also be used regularly in the oven. I usually use the last bit to make calzones!

  Now that you’ve made the dough you can customize the pizza with whatever toppings you’d like! Now it’s time to share the recipes to our two favorite pizzas! 

 I did not add measurements to the toppings in these recipes because it is all based on preference.

BBQ Chicken Pizza 

  When I was asking Tyler to walk me through this recipe for you all he told me that it’s a great left over pizza! He often has left over grilled or Rotisserie chicken from his trips and he chops that up to throw on or if you have vegetables in the fridge that need to be used this would be the perfect way to use those up too!

Ingredients
  

  • Shredded mozzerella
  • gargonzola cheese
  • Chicken cooked (grilled, rotisserie, etc.)
  • chopped red onion
  • Cooked bacon diced
  • pepperoncinis sliced
  • BBQ sauce
  • Ranch optional
  • italian seasoning
  • flakey salt

Instructions
 

  • Once you have your dough prepped and on the pan (see dough recipe above) sprinkle on mozzarella & gargonzola
  • Then add the chicken, red onion, bacon, & pepperoncinis
  • Cook pizza on grill according to instructions in the pizza dough recipe (above)
  • Once it's done add BBQ sauce, Ranch, italian seasoning and a dash of flakey salt (optional but reccomded)
  • Slice pizza and enjoy!

My Favorite Pizza 

  I don’t have a official name for this pizza besides DELICIOUS! I eat it almost every week and it never gets old, even just typing about it is making my mouth water. The dollops of marinara and pesto give you a nice variety in every bite. Plus, basically anything that includes fresh mozzarella I am in on without any questions (besides, “Is it vegetarian”? those are my famous last words)

Instructions
